Kylesku Hotel is lucky to work closely with some wonderful local suppliers who make the best of the natural bounty of this part of Scotland. From succulent local grass-fed meats to fresh-off-the-boat seafood, the tastiest soft fruits, vegetables, malt whisky and gins infused with Scottish botanicals – our larder is bursting with the glorious flavours of Scotland!
Our suppliers are farmers, fishermen, crofters, growers, makers and friends. Like us, they’re committed to animal welfare, sustainability and environmentally conscious food production and sourcing wherever possible.

Fish & seafood suppliers

Loch Laxford Shellfish
John Ross owns the mussel farm which can be seen from the hotel. We source our mussels directly from John and Loch Glendhu – they simply don’t come fresher!

Darren Mackay
Darren is our neighbour, and fishes single-handedly on Loch Glendhu, the loch just outside the hotel. He uses creels to fish sustainably for langoustines and spineys.

Dun Canna Shellfish
Ruaridh and Hamish are moored in Ullapool and take out the Freebird to fish sustainably in local waters using creels. They fish for langoustine, crab, lobsters and spineys.

Keltic Seafare
Hand-dived king scallops. The divers of Keltic Seafare hand-dive these local scallops in the crystal clear Class A waters in and around the Kylesku area.

Ullapool Smokehouse
The best hot and cold smoked salmon and trout in the area. Just sea, salmon, salt and smoke, with delicious heather honey and whisky specials. Their fish is hand-reared, freedom food-certified and sourced from the wonderful Wester Ross Fisheries.

DM Seafoods
Based in Ullapool, with connections to Scottish fleets all the way around the north coast. David and Cameron provide us with quality fish, ranging from haddock for our fish and chips to whole turbot or salmon sourced from the acclaimed Wester Ross salmon.
The local produce that we use is extremely fresh. Using it also creates a ripple effect in the local economy - that’s equally important to us, because it’s really hard to make a living up here.
Meat & pâté suppliers

Macbeth’s Butchers
Macbeth’s Butchers have their own farm, Edinvale, which is home to Highland and Shorthorn cattle. The farm’s ethos is to work with Scottish native breeds and the surrounding environment to produce amazing beef for discerning customers throughout the country.
The cattle are reared on a grass or grass-based diet, producing natural beef which is dry-aged for a minimum of three weeks, then prepared to order.

River Croft
We source free-range pork for our burgers from River Croft, who are based near Inverness. Animal welfare is at the heart of River Croft. From the day they’re born, their Oxford Sandy and Black pigs lead stress-free lives, free ranging in over-sized paddocks. These pigs are fit as fiddles, thanks to good food and plenty of exercise.

James Curley
A local crofter who lives in Elphin, just 20 minutes from the hotel, and raises rare breed Shetland sheep fed on herb-rich grassland. This produces delicious gamey, lean lamb, mutton and hogget which we get directly from James. He’s also a renowned angler and can take you on a fly fishing adventure.

Split Rock Croft
Helen and Graham run this beautiful croft at Split Rock, on the Drumbeg coast road,. They rear pigs, Highland cows and other animals. They’re proper free range – they can often be seen running around on the beach!

Highland Charcuterie
High quality patés and charcuterie made by Isabelle, who smokes and cures her own produce near Oldshoremore.
Produce suppliers

Croft 16
Pete & Gill own this lovely croft overlooking the bay in Scourie, just 10 miles north of Kylesku Hotel. They supply us with home-grown salads, herbs, fruit and vegetables, and prove that you can grow amazing fruit and vegetables in this climate. The taste is unbelievable – just how fruit and veg should taste, but rarely do!

The Jammery, Culkein
This fantastic little jammery is tucked away just off the Drumbeg coast road. Try a range for breakfast! The banana jam is one of the most popular.
Drinks suppliers
Beers
We offer a wide range of beers and ales from local breweries, including:
- Black Isle Brewery. Just north of Inverness. Certified organic craft brewery.
- Orkney Brewery. Multi award-winning beers and ales.
- Windswept Brewing. Two ex-RAF pilots who started their own brewery a few years ago.
Malt whisky
We offer over 40 different malts, including some highly unusual ones for whisky enthusiasts.
Gins
We offer an ever-growing selection of local gins. Our current favourite is the Coastal Gin from Badachro Distillery near Gairloch.
Gordon and Vanessa produce hand-crafted artisan gin using botanicals picked and selected by Vanessa from the surrounding hills, field and shores. These are distilled in their copper still, Delilah.
Badachro Distillery is open to visitors during the holiday season.
